Flavoring and extending the shelf life of cucumber juice with aroma compounds-rich herbal extracts at 4 °C through controlling chemical and microbial fluctuations

Abstract: This work aims to enhance the flavor of functional cucumber juice using herbal extracts of peppermint, basil, lavender, and lemongrass ethanolic extracts and extend its lifetime by controlling the chemical and microbial fluctuations. Cucumber juices were processed as; non-supplemented (J-Con), J-PME, J-BE, J-LE, and J-LEE supplemented with peppermint, basil, lavender, and lemongrass ethanolic extracts, respectively. Peppermint extract was significantly scavenged 88% of DPPH radicals and inhibited the growth of… Show more

“…Isoprene derivatives, flavonoids, glucosinolates and other herbal metabolites may affect the physiological and chemical function of the birds gut. The stabilizing impact on the intestinal microbiome may be accompanied by intermediate nutrient metabolism ( El-Saadony et al, 2021h ; Reda et al, 2021b ; Saad et al, 2021a , b , c ).…”

“…The utilizing of chitosan can be maximized by converting to nano form by using the biological pathways, i.e., plant extract ( Saad et al, 2021d ) and microbial synthesis of nanomaterials i.e., bacteria ( Reda et al, 2020 , Reda et al, 2021 , El-Saadony et al, 2020b , Abd El-Hack et al, 2021 , El-Saadony et al, 2022 ) and fungi ( El-Saadony et al, 2021e , El-Saadony et al, 2021f ). These pathways produce eco-friendly and cost-effective nanomaterials of small sizes with valuable biological activity ( Sheiha et al, 2020 , El-Saadony et al, 2021g , El-Saadony et al, 2021h , El-Saadony et al, 2021i ).…”

“…Cholesterol is one of the main causes of death and diseases resulted in free radicals. It is well-known that natural antioxidants such as plants and microbial metabolites, bacteria and fungi is considered a source of antioxidants which can scavenge the free radicals in the body ( Zohri et al, 2017 , Abdel-Moneim et al, 2022 , El-Saadony et al, 2020 , El-Saadony et al, 2021 , El-Saadony et al, 2022 , Saad et al, 2015 , Saad et al, 2021 ). Significant decrease of cholesterol in this experiment may be due to hyperthyroidism ( Rizos et al, 2011 ).…”
