Food Analysis: Present, Future, and Foodomics

Abstract: This paper presents a revision on the instrumental analytical techniques and methods used in food analysis together with their main applications in food science research. The present paper includes a brief historical perspective on food analysis, together with a deep revision on the current state of the art of modern analytical instruments, methodologies, and applications in food analysis with a special emphasis on the works published on this topic in the last three years (2009)(2010)(2011). The article also d… Show more

“…However, there is not yet a methodology capable of detecting, identifying and quantifying all human metabolites. Combining techniques such as system-based mass spectrometry, nuclear magnetic resonance, gas chromatography and liquid chromatography may be a better approach for global metabolite identification [93]. As with GWAS, many chemicals and metabolites can be tested for and associated with diet and disease [16] through metabolome-wide studies.…”

“…With ASE, the adverse environmental impact of the conventional reference methods could be reduced in three different ways: reduction of the amount of solvents required; reduction in the amount and the toxicity of solvents and reagents employed in the extraction step, especially by automatization and miniaturization (Stocka et al, 2011). The procedure is highly automated(Kuranchie-Mensah et al, 2013)and it is already especially useful for routine analyses of environmental pollutants and food in many analytical laboratories (GiergielewiczMożajska et al, 2010).It aims to save employee labor and time, while improving the efficiency of the analyte isolation (Cifuentes, 2012) running safe operations without a continuous supervision.…”

“…However, an important challenge is to detect untargeted compounds and to determine their identity in foods. Therefore, the development of advanced analytical techniques is expected to play a crucial role [12]. Moreover, in order to establish the MRL-s the European Food Safety Authority (EFSA) take into account that no information regarding the storage stability of pesticides, and their metabolism and residues in crops.…”
