Abstract

After washing, dried fruit is examined on a conveyor belt and any remaining foreign bodies are removed _ HE HYGIENIC manufacture and handling of t foods is now generally accepted to be right in principle; all agree that cleanliness and hygienic food handling are worthwhile and that high standards must be maintained. Yet there still are many firms in the United Kingdom who agree with this principle but do not put it into practice. Hygienic food handling is a combination of commonsense and technology and usually more commonsense than technology. First of all, therefore, it is proposed to deal with basic policy considerations and later with some of the technological factors involved.
