Individual difference in the number of chewing strokes and its determinant factors

Abstract: This study was carried out to clarify the distribution and individual variation of the number of chewing strokes before last swallowing (NCS), as well as to assess the factors that affect NCS, when dentulous adults masticate the same type of food. NCS was measured in 75 dentulous adults using gummy candies. Measurements were repeated five times to obtain the average and variation. Moreover, the correlation of NCS with various physiological factors (lateral width and vertical distance of chewing loop, angle of … Show more

“…Other determinants are saliva, muscles (influencing bite force), and cultural habits and personality. In other words, also cultural and personality traits determine 'slow' and 'fast' swallowers [9,10,[16][17][18]. The multifactorial nature of the chewing process undoubtedly explains the large individual differences in the outcomes of this study on swallowing threshold parameters.…”

“…In dentate subjects, individual differences in number of chewing strokes prior to the final swallow was affected by multiple factors, including personality, with some subjects executing 9-times the number of mastication strokes than others (6). An increase in number of chewing strokes was observed with aging (7)(8)(9), possibly due to the concomitant decrease in muscle mass and maximal occlusal force that occurs with age (10)(11)(12)(13).…”

“…The number of chewing strokes that occur up to the beginning of swallowing will depend on the volume and characteristics of the food ingested, on the neuromuscular conditions, the pattern of facial growth, the need to rush through a meal (2) , and on the individual's personality (6) . Studies have demonstrated that there is no relationship between masticatory performance and number of chewing strokes (6,7) .…”
