Abstract:Gamma-aminobutyric acid (GABA), a main inhibitory neurotransmitter in brain, is a nonproteinogenic amino acid. The production of GABA from rice bran by lactic acid bacteria (Lactobacillus brevis) is an approach for maximising the potential of agricultural byproduct and reducing production cost.
