Purpose. The purpose of this study is to determine the antifungal and antioxidant activities of the essential oil from Angelica koreana. Methods. Essential oil was obtained from the dried roots of A. koreana by steam distillation, and its composition was identified by gas chromatography and mass spectrometry (GC-MS). The minimal inhibitory concentrations (MICs) of the oil fraction and its main components were determined by broth dilution assay using common pathogenic Aspergillus and Trichophyton species. The combined effects of the oils with itraconazole were evaluated using a checkerboard titer test. In addition, 1,1-diphenyl-2-picryl-hydrazil (DPPH) free radical scavenging, nitrite inhibition, and reducing power were determined to assess the antioxidant activity of this oil. Results. The essential oil fraction and its main components showed inhibitory activity against all of the tested fungi, with minimal inhibitory concentrations (MICs) of 250–1000 μg/mL. Furthermore, this oil exhibited synergism when combined with itraconazole. Conclusion. In the treatment of infections caused by Aspergillus and Trichophyton species, combining itraconazole with either A. koreana essential oil or its main components may reduce the minimum effective dose of itraconazole required and, thus, minimize its side effects. In addition, this oil is a promising source of natural antioxidant agents.

Melanoidins are the high molecular weight brown end products of the Maillard reaction. They are formed during heat processing of foods like coffee, bread, malt, and beef. A chemical definition of these food polymers is still impossible, despite several efforts to determine their structure. In the last years, the interest in research on melanoidins has increased due to their biological activities. Coffee brew is one of the main sources of melanoidins in human diet. Various melanoidin fractions were obtained by applying chromatographic separation techniques or specific isolation procedures, allowing, a partial view on structural features and diversity of coffee brew melanoidins. Different melanoidin populations can be found with respect to total carbohydrate contents and their structural features. In this paper, the recent advances in research on coffee melanoidin structures and formation mechanisms are reviewed. The participation of hydroxycinnamates in melanoidin formation, especially true for coffee melanoidins, is a hypothesis older than three decades, but only recently more consistent data have been obtained for their presence. Although the role of hydroxycinnamates in melanoidin formation is not yet completely understood, it was demonstrated that the interaction between phenolic compounds and melanoidins can be of non-covalent or of covalent nature. The most likely linkage point is through the protein fragments incorporated in the coffee melanoidin during the roasting process, although carbohydrates, such as arabinose, seem to be possible binding sites for the chlorogenic acid derivatives on these brown structures, too.

A comparative study of antioxidant activity in some Korean medicinal plant used as food materials

The antioxidant properties of ten Korean medicinal plants were analyzed using various antioxidant assays, including their ability to scavenge the DPPH free radical, ABTS radical, superoxide anion, and nitrite, and their reducing powers. The contents of total phenolic compounds and flavonoids were also determined. Of the ten plants, Ulmus pumila L. (UP) and Rubus coreanus Miq. (RC) possessed strong antioxidant activity for all models tested. The half-maximal inhibitory concentration (IC 50 ) for DPPH free radicals of UP and RC was 4.16 and 4.87 μg/mL, respectively. The IC 50 for superoxide anion of UP and RC was 145.7 and 136.3 μg/mL, respectively. In addition, the ABTS radical scavenging activity of these materials was higher than that of Trolox. The total phenol content of UP and RC was also significantly higher than in the other herbs. UP had the highest flavonoid content of the ten materials. A correlation was observed between the antioxidant activity and total phenol content.
