Is it possible to use the DPPH and ABTS methods for reliable estimation of antioxidant power of colored compounds?

Abstract: Negative impact of radicals on humans and animals is responsible for growing research interest in antioxidant properties of substances, which protect living organisms from the damaging influence of these reactive species. Among numerous methods for antioxidant activity estimation, DPPH and ABTS are the most popular and commonly used ones due to their ease, speed, sensitivity and the usage of stabile radicals. The paper shows and discusses the antioxidant properties of a few compounds exhibiting different extin… Show more

“…Radical scavenging activities are essential because of the detrimental role of free radicals in foodstuffs and biological systems. ABTS and/or DPPH scavenging assays are common spectrophotometric methods for analyzing the radical scavenging activities (Gülçin et al, 2010;Olszowy & Dawidowicz, 2018). The DPPH assay offers an effective, quick and simple way to assess potential antioxidants.…”

“…Therefore, for determining the antioxidant activity of plant extracts different methods are applied in parallel. Among these, DPPH and ABTS radical scavenging methods are the most popular and most commonly used due to their sensitivity and ease [38]. These methods allow determining the activity of both hydrophobic and hydrophilic compounds [39,40].…”

“…The radical scavenging activity (RSA) of extruded products depends not only on the phenolic compounds but also on the interactions between these bioactive compounds and the food matrix [46]. The antioxidant capacity of extrudates and non-extruded control samples was determined using the DPPH assay, a sensitive electron-transfer reaction [47]. Figure 1c shows that the highest RSA (lowest IC 50 ) was obtained for samples processed at 70 • C and 150 rpm.…”
