Mapping the scholarly research on restaurants: a bibliometric analysis

Abstract: Given the recent surge in restaurant research, there is a need for timely reviews employing quantitative methods to portray the intellectual structure of the field. This paper aims to address this gap by conducting a comprehensive bibliometric analysis of restaurant research on the Web of Science database. The research investigates the dynamic evolution of the restaurant literature during three critical stages between 1995 and 2021. Based on 1146 journal articles published by 1849 authors, the paper analyzes d… Show more

“…According to Li et al [71], the knowledge base and research trends of a specified field can be exposed with the help of co-citation networks, which are composed of two articles concurrently cited in a third article. When comparing the semantic similarities of different articles or authors, co-citation networks are very helpful [72]. Changes in a field's prevailing paradigm can be uncovered by looking at the patterns of co-citations over time [73].…”

“…Collaboration networks are commonly used in bibliometric investigations [75] as a useful tool for graphically representing connections between scholars, academic institutions, and countries. These networks can also be used to show co-authorship relationships among researchers, academic organizations, or countries, which can indicate international collaboration [72]. According to Zou et al [76], collaborative research efforts can lead to research innovation, high research quality, knowledge diffusion, and other mutual benefits.…”

“…As an interdisciplinary subject spanning multiple disciplines, PP adds to the complexity (Nzimakwe and Biyela, 2021). In contrast, a bibliometric analysis can provide an objective, unbiased and timely examination of the scholarly progress and intellectual structure of the PP field (Rejeb et al. , 2022b).…”
