Measuring food and nutritional losses through value stream mapping along the dairy value chain in Uganda

Abstract: The growing burden of food losses has intensified the need for reliable and comparable data. This study extends the application of lean manufacturing practices and uses Value Stream Mapping (VSM) analysis with the Food Loss and Waste (FLW) Accounting and Reporting Standard to identify hotspots and analyze the magnitude of both food and nutritional losses in the food value chain. A case study on the dairy value chain in Uganda is utilized to understand the production configuration (primary production, processin… Show more

“…These factors should be considered before measuring or estimating losses. Quantification along the supply chain used in the literature [ 7 , 18 , 19 , 22 , 23 , 30 ] does not consider the influencing factors of long-term pre-real-time production, which can fundamentally determine the evolution of the level of losses ( Figure 3 ). Based on this, it is advisable to calculate the occurrence of losses right from the design of the plant (slope of pipes, expertise, etc.).…”

“…No previous literature has dealt with the measurement of product-level milk loss [ 15 , 17 , 18 , 19 , 20 , 21 , 22 , 23 ]. This research found that it is possible to measure milk losses at individual product levels but, in addition to real-time production processes, other factors are worth considering—as Verma et al [ 31 ] also acknowledged—to minimize losses, thus contributing to the achievement of sustainability goals.…”

“…Del mismo modo, en [9] utilizan VSM como una herramienta para medir los desperdicios generados en la cadena de suministro de la leche en Uganda. Durante todo el proceso, de principio a fin, las pérdidas de alimentos a nivel de cadena se estiman en una magnitud de hasta el 14%, lo que se traduce en un valor nutricional sustancial que desaparece del sistema alimentario, comprometiendo la capacidad de las personas para cumplir con sus recomendaciones nutricionales.…”
