The research purposed to evaluate the bioactive compounds and antioxidant content in water and 50 % ethanol extracts from different vegetal parts of seven herbs (black bryony, dandelion, leuzea, asparagus, St. Benedict's thistle, cotton thistle, and sarsaparilla). Sugars and total fructans (inulin ad fructooligosacchrides (FOS) were analysed by spectrophotometric and chromatographic methods. The total phenols, total flavonoids and derivatives of caffeic acid were also determined. The antioxidant activity was evaluated by DPPH and FRAP methods. Inulin and FOS were detected only in three plants (leuzea, dandelion and the cotton thistle). Dandelion roots were evaluated as the richest source of total fructans (18 g/100 g dw). The highest phenolic content was found in sarsaparilla roots 50 % ethanol extracts (21 mg GAE/g dw). Leuzea roots were evaluated as a rich source of dihydroxycinnamic acid derivatives and flavonoids. The high antioxidant activity demonstrated sarsaparilla water extracts, followed by water and 95 % ethanol of leuzea roots and cotton thistle flowеring heads (20-98 mM TE/g dw). The study demonstrated the use of some medicinal plants (especially leuzea, sarsaparilla and cotton thistle) as sources of antioxidants and inulin-type fructans in food and beverages. The utilization of natural extracts as an ingredient in cosmetic products becomes a better choice for customers. Rice berry has been defined as a potential source of anti-free radical properties which is able to be formulated in cosmetic products. Therefore, the objectives of this study are 1) to investigate an antioxidant by ABTS and ABTS assays, total antioxidant compounds by phenolic and total flavonoids assays, and cell viability to fibroblast NIH3T3 (IC80) of ethanol and aqueous extracts of rice berry by MTT test, 2) to evaluate cream stability of each formulates adding different concentrations of rice berry extracts. The results showed that both extraction solvents did not show cytotoxicity to fibroblast NIH3T3 (IC80). However, the ethanol rice berry extracts exhibited a higher total phenolic compound, total flavonoid content, and anthocyanin content than the water rice berry extracts. The physical properties of each cream formulated, including rice berry extracts, showed no unacceptable properties. It can conclude that rice berry extracts have the potential to be a natural ingredient in cosmetic products after studies of the antioxidant properties, antioxidant compounds, cytotoxicity to normal fibroblast, and physical properties after being added to cosmetic cream.

Indigenous edible plants are important components of food systems that are linked to food security and are important sources of nutrients with potential health benefits. Since knowledge about Thailand's various indigenous plants is limited, this study determined the nutritive values and bioactive compounds contained in eight edible indigenous plants growing within the conservation area of the Electricity Generating Authority of Thailand, Srinakarind Dam, Kanchanaburi province. Plant samples were analyzed as fresh or cooked (blanched or boiled) depending on customary preparation and consumption habits. Results showed that shoots and young leaves of Jang (Maerua siamensis Kurz), Ta-Kuk (Albizia lebbeck (L.) Benth), Pak-Wan-Pa (Melientha suavis Pierre), and Som-kob (Hymenodictyon exelsum Wall.) have potential health benefits in terms of nutritive values (vitamin C, dietary fiber, protein) and bioactive compounds (carotenoids, phenolic compounds, antioxidant activity). Shoots and young leaves of Jang were highest in protein, dietary fiber, phenolic compounds, and antioxidant activity. Shoots and young leaves of Ta-Kuk had the highest vitamin C level and considerable amounts of protein, dietary fiber, phenolic compounds, antioxidant activity, and carotenoids. Loss of vitamin C and bioactive compounds occurred most often in boiled plants rather than those that were blanched, though carotenoids increased with either boiling or blanching. This study's important findings should be translated into practical knowledge and disseminated to local communities and at the national level to encourage plant conservation, nutrition education, and the increased consumption of these indigenous plants.
