Metabolomics for measuring phytochemicals, and assessing human and animal responses to phytochemicals, in food science

Abstract: Metabolomics, comprehensive metabolite analysis, is finding increasing application as a tool to measure and enable the manipulation of the phytochemical content of foods, to identify the measures of dietary intake, and to understand human and animal responses to phytochemicals in the diet. Recent applications of metabolomics directed toward understanding the role of phytochemicals in food and nutrition are reviewed.

“…Metabolomics is the simultaneous measurement of all detectable small molecules or metabolites present in biological samples such as biofluids, tissues, and cellular extracts to elucidate the effect of a particular stimulus on metabolic pathways [22]. The use of metabolomics in nutritional sciences is gaining momentum, and global metabolomics profiling was utilized in this study to help capture the potential influence of a polyphenol- and protein-rich supplement in countering physiologic stress indicators associated with an intensified 3-day exercise training period.…”

“…This might not be the case for untargeted analysis due to the need to target as many metabolites as possible. Extraction techniques commonly used for fermented foods are solvents (methanol, chloroform, ethanol, acetonitrile) [27,28,32], similar to those used in other metabolomics studies [15,17,24,31]. When the focus of the study is on specific nonvolatile metabolites, derivatization may be required prior to analysis on GC-MS.…”
