Methodological Approaches to Identification and Detection of False Food Fish Products

Abstract: The article discusses the problem of creating objective methods for assessing the quality of fish raw materials. The NMR method is recommended for a comprehensive analysis of the metabolic profile of salmon and cod fish species in order to characterize the qualitative indicators and identify the species composition.
