Microencapsulation of Anchovy (E ngraulis encrasicolus  L.) Oil: Emulsion Characterization and Optimization by Response Surface Methodology

Abstract: The aim of the present study was to evaluate the anchovy (Engraulis encrasicolus L.) oil emulsion characterization and to optimize the anchovy oil microencapsulation process by spray drying.
