Nitrate and nitrite in vegetables from north China: content and intake

Abstract: The contents of nitrate and nitrite in potato, cabbage, Chinese cabbage, scallion (shallot), celery, cucumber, tomato, eggplant and wax gourd taken from the north China market from 1998 to 1999 were determined. These vegetables provide the major contribution to the nitrate intake from the diet. The highest content of nitrate was found in celery followed by Chinese cabbage, cabbage, scallion, wax gourd and eggplant. For all the products, a great variation in the content of nitrate was found. Generally, the nitr… Show more

“…Studies on daily dietary intake of nitrate in the human body have been conducted in different European Union countries like Slovenia (Susin, 2006), Estonia (Tamme, 2006), Denmark (Petersen, 1999), Spain (Pardo-Marín, 2010; Quijano, 2016), Poland (Mitek, 2013;Szymczak, 1999), Italy (Lucarini, 2012), Belgium (Temme, 2011), Finland (Penttilä, 1990), and France (Menard,2008), as well as in some other countries in the world (Santamaria, 1999), like Korea , China (Zhong, 2002), Honk Kong (Chung, 2011), the USA (Nuñez de González, 2015) In all these studies, daily intakes of nitrate in the body were determined based on the results of research into the presence of nitrate in various types of food.…”

“…The total intake calculated from nine vegetables that account for 80% of the total consumption in the north Chinese diet was 423 mg day -1 for nitrate and 0.68 mg day -1 for nitrite (Zhong et al, 2002). In New Zealand, the mean dietary exposure to nitrate from food and water combined was estimated to be 16% of the ADI, with a median exposure level of 9% of the ADI.…”

“…Although vegetables contain a minor amount of nitrite, this can be increased significantly by microbiological reduction of nitrate if they are stored incorrectly. It was suggested by Zhong et al (2002) that this is especially a problem for leafy vegetables, because soil adhering to them may be difficult to remove completely.…”
