Nutritional value of promising raspberry varieties

Abstract: Raspberry is a crop, characterized by a valuable chemical composition, which determines the wide spectrum of its utilization not only as a fresh fruit, but also as a plant raw material for the food industry. The purpose of the paper is to make an integrated assessment for the fruit of promising raspberry varieties from genetic pool of FSSI “I.V. Michurin FSC” for nutrient and biologically active substances content and mineral elements. The object of investigation was 18 raspberry fruit varieties. The varieties… Show more

“…These contents only cover 0.5-3% of the daily requirement for Ca (Table 4). The low levels of Na in the investigated plant materials are consistent with the literature data [1,48]. On the other hand, the Ca content previously described in the literature for two cultivars of R. occidentalis 'Jewel' and 'Bristol' was 10 times higher than that determined in the analysed raspberries [50,51].…”

“…The obtained results confirm the high content of potassium (K) in raspberries, especially in all Rubus idaeus yellow fruit cultivars (1266.25-1374.74 mg/100 g) (Table 3) [48][49][50][51][52][53][54].…”

“…Strawberries and cherries appear to be the least rich in fiber, with values between 1.3 and 2.2 mg/100 g FW. According to Akimov et al [ 55 ], insoluble nutritional fiber is dominant in raspberry (68.6%). The necessary daily norm for the consumption of nutritional fiber is 20 g [ 54 ].…”

“…In the prevention and treatment of age-related diseases, antioxidant strategies based on nutrition are used, including the addition of antioxidants and trace elements in the prevention (Opara, Rockway, 2006). Significant intervarietal differences in the mineral content of Na, K, Ca, Mg, Fe, Cu and Zn in raspberry fruits of different colors were established by the studies of Akimov et al (2021). The quantitative and qualitative composition of mineral substances of fruits and berries depends on the botanical species, cultivar, soil and climatic conditions, methods of cultivation, etc.…”
