“…Naturally occurring in all major cereal grains, cocoa, and other foods, unfortunately, OTA can pose severe toxicity to many animal species upon ingestion, including kidney damage, liver necrosis, and enteritis. 1,2 Insights from metabolism also argue that OTA exhibits genotoxic activity via oxidative damage and can induce carcinogenesis (IARC Group 2B). 3 According to a survey of OTA exposure in the European diet, cereals and cereal derivatives represent the food groups contributing the most to OTA exposure.…”

“…The TK of OTA in laboratory animals, humans and some target species has been recently detailed in the EFSA 2020 Opinion, based on the reviews by Ringot et al (2006), Vettorazzi et al (2014), Heussner and Bingle (2015) and K € oszegi and Poor (2016). For more recent reviews see Tao et al (2018) and Liu et al (2022). The main steps of OTA kinetics are summarised in the following paragraphs.…”

“…Ochratoxin A (OTA) is a fungal toxin widely present in various foods and feeds and is able to lead to multiple organ toxicity (Khoi et al, 2021). The mechanism of OTA toxicity involves metabolic dysfunction, exacerbation of membrane lipid peroxidation, cessation of mitochondrial respiration, and induction of DNA damage, thereby producing ROS and inducing oxidative stress (Liu et al, 2022). H 2 O 2 has been used as a positive control in the current investigation.…”
