Optimization of the Production Process of Bishop’s Crown Pepper (Capsicum baccatum var.) Hydroalcoholic Extract

Abstract: This study developed and evaluated the efficiency of methods to produce hydroalcoholic extract of Bishop’s Crown pepper. Analyses were conducted to investigate the effects of independent variables (ethanol concentration of the extracting solution and resting time) over the dependent variables (percent yield, acidity, carotenoids, phenolic compounds, anthocyanin content and vitamin C). The interactions between the variables were studied through seven factorial experiments. Percent yield (Y%), caroteno… Show more

“…Extractable color in the range of 36.9–144.2 ASTA color units and capsaicin in the range of 999–47,814 SHU, respectively, were extracted using solvent extraction in six C. annuum cultivars . Higher concentrations of ethanol (up to 85%) were able to extract higher % yield of carotenoids, vitamin C, and phenolic compounds from C. baccatum (Bishop’s Crown Pepper) . Solvent extraction of carotenoids with 60% acetone and 40% petroleum ether provided a yield of 42 mg kg –1 DM from chili byproducts .…”
