Abstract: ABSTRAKFruit leather merupakan salah satu jenis kudapan berasal dari daging buah yang telah dihancurkan dan dikeringkan, sehingga berbentuk lembaran tipis yang mempunyai konsistensi dan rasa yang khas. Tujuan penelitian ini adalah untuk mendapatkan rasio terbaik dari bubur buah salak padang sidimpuan dan bubur buah nanas dalam pembuatan fruit leather.
