Pemanfaatan Kulit Melon Menjadi Selai

Abstract

Abstrak Penelitian eksperimen ini bertujuan untuk mengetahui kualitas selai kulit melon yang dilihat dari aspek warna, rasa, dan konsistensi. Metode pengumpulan data yang digunakan dalam penelitian ini yaitu metode observasi dengan menggunakan instrumen berupa lembar uji organoleptik dengan 3 tingkatan yaitu baik, cukup, dan kurang. Panelis dalam penelitian ini merupakan panelis terlatih yang terdiri dari 20 orang panelis. Teknik analisis data yang digunakan teknik deskriptif kuantitatif. Hasil penelitian menunjukan kualitas selai kulit melon dilihat dari aspek warna berada pada kategori baik dengan skor (2,85) yaitu memiliki warna hijau kekuningan, kualitas selai kulit melon dilihat dari aspek rasa berada pada kategori baik dengan skor (2,8) yaitu memiliki rasa manis dan asam, dan kualitas selai kulit melon dilihat dari aspek konsistensi berada pada kategori baik dengan skor (2,85) yaitu memiliki konsistensi kental dan berserat. Kata kunci : Selai, kualitas, kulit melon Abstract This experimental study aims at identifying the quality of melon skin jam form its color, taste, and consistency aspects. The data of the study were collected through observation method by using organoleptic expert judgment sheets with three different levels, namely: good, fair, and poor. The panelists of the study were trained panelists, which consisted of 20 panelists. The data were analyzed using descriptive quantitative technique. The results of the study show that the quality of melon skin jam in terms of its color is categorized into good with a score of 2.85, it has yellowish green color, from the taste aspect, the quality of the melon skin jam is categorized into good with a score of 2.8, it has sweet and sour taste, and the quality of the melon skin jam from the consistency aspect can be categorized into good with a score of 2.85, it has thick and fibrous texture.
