Perspectives on Future Protein Production

Abstract: An increasing world population, rising affluence, urbanization, and changing eating habits are all contributing to the diversification of protein production. Protein is a building block of life and is an essential part of a healthy diet, providing amino acids for growth and repair. The challenges and opportunities for production of protein-rich foods from animals (meat, dairy, and aquaculture), plant-based sources (pulses), and emerging protein sources (insects, yeast, and microalgae) are discussed against the… Show more

“…Given this, now is an appropriate time to consider the concept of “protein variety”. Globally, current food systems lack diversity and are reliant on just a small range of foods, with approximately 75% of global food supplies being derived from around five animal and 12 plant species [ 68 , 69 ], with little mention of fungal species. Novel precision fermentation yielding mycoprotein is a viable third category of protein that could be better utilised to meet growing protein demands [ 68 ].…”

“…Instead, we should think about moving towards the concept of “protein diversification”. Livestock-derived protein, aquaculture-derived protein, plant protein, marine protein, e.g., algae/seaweed, insects, protein from fermentation, e.g., mycoprotein and meat analogues [ 68 , 70 ] can all provide protein. This approach would embody a greater range of food options for the consumer, whilst the ratios in which these are consumed can be adjusted to align with health and sustainability policies.…”

“…Proteins are the building blocks of life and therefore are an essential part of healthy diet [ 50 ]. The basic units of all proteins are 20 amino acids, mainly L-amino acids.…”

“…Moreover, yeast have the flexibility to utilize a wide range of substrates, including wastes, biomass, and byproducts. The concept of precision fermentation, which utilizes genetic engineering and synthetic biology to synthesize high-value food ingredients (e.g., leghemoglobin, casein and whey proteins, cheese, egg whites, animal lipids), is also being utilized to produce food ingredients with yeasts and other microorganisms (Colgrave et al, 2021). Products from precision fermentation are outside of the scope of this article, which focuses on the cultivation and processing of whole cells.…”

“…For instance, alternative protein sources utilizing plant protein extracts from soybeans, peas, potatoes, and others to produce products that mimic the characteristics of animal tissue have been successfully commercialized. However, plant-based proteins are not relieved of all negative environmental impacts due to practices such as the overapplication of synthetic fertilizers and pesticides which can lead to nutrient runoff and negative consequences on pollinator populations (Colgrave et al, 2021).…”
