Physicochemical properties, antioxidant activities and hypoglycemic effects of soluble dietary fibers purified from Lentinula edodes

Abstract: Air-dried L. edodes, purchased from a market in Xuzhou, China, were washed, dried, and cut into small pieces. The pieces were then pulverized and powdered using an XA-I high-speed pulverizer (JiangSu Dongpeng Instrument Manufacturing Co., Ltd.) and passed through a 60 mesh screen. Subsequently, the powder was soaked in 95% ethanol for 48h to remove fat-soluble substances. The soaked powder was then dried in an oven at 40 °C. The samples were placed in a dry container for further analysis.
