Phytochemical Test, Vitamin C Content and Antioxidant Activities Beet Root (Beta vulgaris Linn.) Extracts as Food Coloring Agent from Some Areas in Java Island

Abstract: The use of coloring agent as food additives has received attention. This is due to the frequent abuse of synthetic dyes that are not for food. Beet root are usually used as natural dyes. This is because beet roots, especially the tubers, are rich in betalain pigments. The purpose of this study was to determine secondary metabolites, vitamin C content and antioxidant activity beet root extracts in several regions of Java. Phytochemical test results show that all of beet root extracts positive contain phenolic, … Show more

“…The value for antioxidant activity, herein converted to the amount of ascorbic acid, is influenced by various aspects such as the type of BR storage, conditions, the environment of its cultivation, and the technique of extract preparation. This explains the wide variance reported in other publications, i.e., from 20 to 170 mg (expressed as mg of ascorbic acid equivalent per 100 g of BRE) [47][48][49].…”

“…Adapun pada Gambar 1(c) hasil uji ekstrak dengan larutan FeCl3 10% membentuk endapan biru kehitaman. Hal ini disebabkan karena garam besi membentuk senyawa kompleks dengan tanin [13]. Kedua uji kualitatif pada ekstrak buah balakka menunjukkan bahwa adanya kandungan tanin pada ekstrak buah balakka.…”

“…The presence of flavonoids was indicated by the color change from pink to brownish orange due to the addition of reagents of Mg metal and concentrated HCl to the extract. The treatment was aimed to reduce the benzopyrone moiety in the structure of flavonoids to generate red or orange flavylium salts [26]. The saponins tests showed positive results to all beetroot extracts, which was indicated by the formation of stable foam [26].…”
