Abstract:In this article, different methods were referred for the preparation of phytosterol (PS) enriched ‘Nutella’ spread prepared by yam-bean extracted milk. Yam bean (Jicama) is popularly known as sank alu in Bengals which is good for preventing risks of hypertension and high blood cholesterol is mostly available in market in winter season.
