Phytosterols and their healthy effects.

Abstract: This book chapter provides information on the principal natural sources and industrial sources of phytosterols and their role in human health and nutrition, particularly as a functional ingredient to decrease plasma cholesterol and low density lipoprotein cholesterol levels.
