Potential Anticarcinogenic Effects of Lactic Acid Bacteria and Probiotics in Detoxification of Process-Induced Food Toxicants

Abstract: Context: Nowadays, it has been proved that there is a relation between dietary habits and incidence of different types of cancers. Consumption of processed foods exposes human to a wide range of toxicants such as heterocyclic aromatic amines, polycyclic aromatic hydrocarbons, acrylamide and nitrosamines that have mutagenic and carcinogenic effects on body and especially induce colon cancer. Under such circumstances, search for antimutagenic agents and helpful strategies have gained interest.Evidence Acquisitio… Show more

“…; Khorshidian et al . ). Apart from various methods that were applied to prevent PAH formation or decrease their content, attention has recently been focused on the use of micro‐organisms, particularly lactic acid bacteria (LAB) and probiotics due to their inhibitory activity against mutagenic compounds in foods (Faridnia et al .…”

“…Except for genetic defects which contribute to 5 to 10% of cancer incidences, the rest (90% to 95%) can be limited by changing lifestyle, increasing physical activity, avoiding smoking and utilizing nutritionally balance diet together with the foods free from contaminants (50). Low consumption of fiber in a diet can induce colon cancers and irritable bowel syndromes.…”
