Jambu is considered a leafy vegetable with expressive relevance in the regions that compose the Brazilian Amazon. However, there are challenges regarding its cultivation, particularly for the nutritional management, since there is little technical information that allows an increase in the efficiency of its production. In this sense, nitrogen (N) gains prominence, since it is related to the increased yield and quality of leafy vegetables, therefore its monitoring of N content in plants is necessary. The objective of this study was to evaluate the efficiency of using the SPAD index to estimate the N content of jambu leaves, total chlorophyll concentration, as well as its relationship with dry mass accumulation due to the increase of nitrogen concentration in the nutrient solution. The design used was completely randomized with eight replications. The treatments were six nitrogen concentrations in the nutrient solution (11, 13, 15, 17, 19 and 21 mmol L -¹ ). After 21 days of transplantation, the SPAD index was measured. Then, these plants were collected to quantify the total chlorophyll, dry mass and nitrogen content. In general, the variables were explained by increasing linear models. There was a positive correlation between the SPAD index and the other characteristics evaluated. Based on the results, the best response at the concentration of 21 mmol L -¹ in the nutrient solution stands out. In addition, the SPAD index has potential to be used in the diagnosis of nitrogen status in jambu leaves.

ResumoA eliminação de descritores redundantes é de grande importância, pois minimiza os esforços na avaliação de genótipos sem perda na precisão de avaliação dos genótipos. Este trabalho teve como objetivo descartar caracteres que pouco contribuem para a discriminação de genótipos de jambu oriundos de diversos municípios do nordeste paraense. Os genótipos utilizados nesse estudo foram obtidos em hortas e feiras localizadas em cinco municípios: Capitão Poço, Castanhal, Ourém, Capanema e São Miguel do Guamá e, no total, foram avaliados 23 caracteres. As estimativas de correlação entre os descritores selecionados e descartados foram obtidas como medida da eficiência da análise de componentes principais, para descartar os descritores redundantes e não-discriminantes neste trabalho. Realizaram-se também as analises de variância de todas as características avaliadas dos genótipos individualmente. O peso seco do caule, número de ramos, diâmetro dos entrenós e o comprimento dos entrenós são características passiveis de descarte para este estudo. Jansen] é uma hortaliça de largo uso na culinária paraense (GUSMÃO et al., 2009). Além disso, essa espécie possui propriedades medicinais atribuídas à substância espilantol, que atua como analgésico, hemostático, antimicrobiano, inseticida e fungicida, entre outros usos fitoterápicos (COUTINHO et al., 2006;TORRES; CHÁVES, 2001). Essas propriedades têm despertado o interesse de empresas, que geram pesquisas e patentes na obtenção de extratos de folhas e flores de jambu (COSTA, 2010), tanto que seu cultivo se difundiu também para a região sudeste do país (COUTINHO et al., 2006).

Jambu, Acmella oleracea (L.), is a low-growing herb plant, with cylindrical, fleshy, decumbent and branched stem varying from 20 to 30 cm in height. It is an abundantly cultivated and consumed vegetable in the northern region of Brazil and usually consumed in preparations of typical foods of the Amazon region. So, this work aimed to compare the chemical composition and physical chemistry of powdered and jambu leaf mass. Acmella oleracea plants were selected, sanitized and their leaves were crushed (without adding water). The mass was dried in an oven with forced air circulation under different conditions of temperature (60, 70 and 80 C) and relative humidity (13.09, 8.14 and 5.45%, respectively), in two layer thicknesses (0.5 and 1.0 cm). The physical, chemical, physicochemical parameters moisture content, water activity, ash, protein, lipids, pH, total titratable acidity and color were analyzed in powdered and fresh leaves. Contrast test was used to evaluate the interaction between the layer thicknesses at 5% level of significance. Considering the contrasts, the parameters total soluble solids, ash, protein and lipids do not differ from those in the fresh sample, demonstrating that these parameters are not modified or degraded with the drying conditions. The pH and color parameters differed from those of the fresh material, due to degradation, which can be linked to the rise in temperature sensitivity. The moisture content and water activity also differed and were reduced, contributing to conservation of the material. Contrast analysis made it possible to conclude that the physicochemical composition did not undergo modifications through the use of drying. In addition, a powdered material with reduced water activity was obtained.
