Proximate Composition, Fatty Acid and Amino Acid Profiles of Narrow-Barred Spanish Mackerel (Scomberomorus commerson) Fillets from İskenderun Bay in The North-Eastern Mediterranean Sea

Abstract: The present study aims to determine the proximate, fatty acid and amino acid profiling of consumed fresh narrow-barred Spanish mackerel (Scomberomorus commerson). Landed fish were freshly sampled (total length 33.7-48.7 cm and weight 617-1260 g) from the Yumurtalık Bay (north-eastern Mediterranean Sea) in Turkey during January, February and March. The protein values were highest in January (22.89%) while the and lowest in February (21.38%) and March (21.73%). Lipid and ash values were not significantly differe… Show more

“…The fatty acids EPA y DHA content were expressed in g·100 g −1 of edible fish muscles according to Eq. (3) [56] , [75] : where FA is the fatty acid (g·100 g −1 muscle of fish); P is the fatty acid percentage (% of total lipids); FC is the free-solvent oil content expressed in fresh weight (g·100 g −1 of fish muscle); C is the conversion factor, calculated according to Weihrauch et al [101] ; Yilmaz [106] , considering the total lipid (TL) content ( Eq. (4) ).…”

“…Protein is essential to a plethora of body functions, including building tissues and muscles, producing hormones and enzymes, providing energy, and supporting immunity (59). Among the essential amino acids, lysine and leucine are found in a relatively high amount in narrowbarred Spanish mackerel (60). Therefore, it is suggested to be a complementary ingredient to cereals (including rice, the staple food in Indonesia) that are usually poor in lysine (59).…”
