Quinoa grains (Chenopodium quinoa Willd.) - a source of protein and biologically active substances

Abstract: In this analytical review, data on the proteins characteristics and main biologically active compounds (BAC) composition of quinoa grains (Chenopodium quinoa Willd.) as well as pharmacological and nutritional properties are considered.
