“…The heat resistance of the spore batch used throughout this work was considerably less than that of the batch prepared by Soares de Melo et al (1973), which had a D 120 value higher than 1-9 min in milk, and z values of 8 °C in buffer and of 11-5 °C in UHT milk. The difference can probably be attributed to the origin of the beef extract in the sporulation medium (Merck instead of Lab Lemco) and to the addition of cations, as well as to the higher incubation temperature during sporulation (60 instead of 55 °C).…”
