“…Myrosinase is normally physically separated from the GLs in the cell, being localized in idioblasts (myrosin cells) . When plant cells are damaged (e.g., during food processing, ingestion and digestion, or injury by predators) the enzyme is released, promoting the hydrolysis of GLs, resulting in a range of breakdown biologically active compounds, like indoles and isothiocyanates (Kissen et al, 2009), and also glucose and sulphate (Singh et al, 2007).
