Stable Isotope Analysis for the Discrimination of the Geographical Origin of Greek Bottarga ‘Avgotaracho Messolongiou’: A Preliminary Research

Abstract: Consumers are increasingly interested in the geographical origin of the foodstuff they consume as an important characteristic of food authenticity and quality. To assure the authenticity of the geographical origin, various methods have been proposed. Stable isotope analysis is a method that has been extensively used for products such as wine, oil, meat, while only a few studies have been conducted for the discrimination of seafood origin and especially for mullet roes or bottarga products. Analysis of the stab… Show more

“…where Rsample and Rstandard are the 13 C/ 12 C ratio of the sample and standard (V-PDB) respectively. The results were normalized to VPDB using ΙΑΕΑ-600 (Caffeine, IAEA, Vienna, Austria), with assigned carbon isotope delta values and standard uncertainties (δ 13 CV-PDB = −27.77‰ ± 0.043‰) [56].…”

“…Interestingly, Chen et al [45] and Thomatou et al [46] analyzed the stable isotopic composition of the highly valuable mullet (Mugilidae fish family) roes, which are produced from salt-drying of mullet eggs. Despite the products being processed, the authors verified that isotopic information of the raw material was maintained, allowing for the identification of the final products by their geographical origin and production method.…”
