Abstract:Glycoproteins are special proteins and important nutrients for hypoglycemic activity. However, the structure of Auricularia Auricula glycoprotein (AAG) and the stability of its hypoglycemic activity during simulated digestion (including saliva, gastral and intestine digestion) in vitro are still unknown.
