“…The second phase was the phase of major mass loss for both SOL and SPI, corresponding to the range of 100–500 °C and 150–500 °C, respectively. Mass loss during this phase was attributed to the breakage of glycosidic bonds and peptide bonds, resulting in depolymerization and degradation of SOL and SPI ( Bikaki et al, 2021 , Long et al, 2022 ), which in turn provided numerous intermediate compounds for the Maillard reaction to promote color and flavor formation. The mass loss reached 50 % at 333.4 °C and 348.3 °C for SOL and SPI, respectively.…”

“…Plant polysaccharides have drawn considerable attention from the world because of their potential application value in various industries ( Sun et al, 2008 ). Previous works have demonstrated that polysaccharides possess essential pharmacological activities including antioxidant, antiglycated, anti-inflammatory, hypolipidemic, antimicrobial and immunoregulatory ( Chen et al, 2019 , Chen et al, 2023 , Long et al, 2022 , Song et al, 2019 , Wang et al, 2022 , Zhu et al, 2019 ). Polysaccharides isolated from the Pteridaceae family were also reported have antioxidant and immunomodulatory activity ( Xu et al, 2009 , Song et al, 2017 , Zhao et al, 2022 ).…”

“…It may be due to a slight decrease in molecular weight after digestion in gastric solution, and it has been reported that the inhibitory activity of polysaccharides on enzymes is closely related to their molecular weight 9 . The inhibitory activity of fucoidan on pancreatic lipase was higher than that of most natural polysaccharides, for example, the IC 50 for pancreatic lipase inhibition of Gracilaria lemaneiformis polysaccharides 33 and Qingke polysaccharides 34 was 15.04 mg mL −1 and 3.76 mg mL −1 . Using orlistat as a positive control, the IC 50 of orlistat was 0.28 mg mL −1 , implying that the inhibitory ability of orlistat on pancreatic lipase was higher than that of fucoidan.…”
