Studies on the development of cassava based reconstituted dry starch sago with modified starch as binder and characterization of its physico-functional properties

Abstract: Aim :Methodology : Results :Interpretation :The objective of the study was to develop and characterize the properties of sago (sabudana) from cassava based reconstituted dry starch with addition of pre-gelatinized starch and wet starch as binders. The dry starch was soaked for 12 hrs at 30 % concentration and then sago was prepared at 40% moisture content with addition of pre-gelatinized starch and wet starch as binders in different treatment combinations. The sago developed from the combination of reconstituted… Show more

“…Cassava (Manihot esculenta Crantz), is widely cultivated by small farmers in developing countries in Africa, Asia, and Latin América. Due to its easy cultivation and production of starch-rich roots, cassava is emerging as the most important tropical tuber crop (Krishnakumar et al, 2020;Pushpalatha and Gangadharan, 2020). According to the Food and Agriculture Organization of the United Nations, "cassava is very important in feeding half a billion people in the world" (Boukhers et al, 2022;Abotbina et al, 2022;Da Silva Pereira et al, 2021;Fathima et al, 2022).…”
