ResumenSe aplicó un diseño factorial fraccionado 2 7-2 para seleccionar las variables con mayor efecto sobre la capacidad antioxidante, el contenido de fenoles y el rendimiento de la extracción utilizando CO 2 supercrítico como solvente sobre hojas y tallos de Salvia officinalis L. El tiempo de extracción, el flujo de CO 2 , la presión de la cámara de extracción y la temperatura de separación se modificaron según el procedimiento simplex para hallar empíricamente las condiciones que produjeran extractos de salvia con el valor más alto de la combinación lineal de rendimiento de extracción, capacidad antioxidante y contenido total de fenoles.Palabras clave: Salvia officinalis, supercrítico, optimización simplex, ácido carnósico. Optimization of the extraction of Salvia officinalis L. antioxidants with supercritical CO 2 AbstractA 2 7-2 fractional factorial design was used to select the variables with the greatest effect on the antioxidant capacity, the total phenolic content and the extraction yield using supercritical carbon dioxide as a solvent on Salvia officinalis L. leaves and stems. The extraction time, the CO 2 flow, the extraction chamber pressure and the collector temperature were modified according to the simplex method in order to empirically find the conditions resulting in salvia extracts with the highest value of the linear combination of extraction yield, antioxidant capacity and total phenolic content.Key words: Salvia officinalis, supercritical, simplex optimization, carnosic acid. Ciencias naturales IntroducciónLa capacidad antioxidante es una propiedad biológica de gran interés para las diversas aplicaciones de las plantas aromáticas. En la salvia (Salvia officinalis) se ha reconocido desde hace mucho tiempo esta propiedad que, junto a su poder microbicida, ha permitido usarla con éxito como preservante de cárnicos y otros alimentos (Meyer, et al., 2002). De la salvia y de otras muchas plantas aromáticas y medicinales se utilizan sus aceites esenciales, sus extractos o sus partes (hojas, flores, raíces) como ingredientes de diversas preparaciones y productos comerciales para el consumo humano. En la búsqueda de una explicación molecular de la actividad biológica de la salvia se ha demostrado que en sus metabolitos secundarios se encuentran varias sustancias que poseen alta capacidad antioxidante, tales como los ácidos fenólicos rosmarínico, salvianólico y ursólico, los flavonoides luteolina y salvicoumarina y los diterpenos fenólicos ácido carnósico, carnosol y rosmanol (Wang, et al., 1998;Lu, et al., 1999a;Lu, et al., 1999b;Lu, et al., 2000;Lu, et al., 2001). The objective was to achieve the extraction of polyphenolic components from this matrix which is considered a hazardous waste from the production of olive oil. The supercritical fluid used was carbon dioxide and the SFE studies were conducted in two stages, the first at a pressure of 200 bar and 40 ºC and the second stage at 300 bar, 45 ºC and using ethanol as co-solvent. In both cases the SFE was performed for 3 hours. The first stage was carried out to obtain a cleaner matrix and the second step was aimed at the components of interest. The overall mass yield obtained was 5.5 %. Preliminary HPLC screening of the samples obtained and also of the water in which the olives were preserved showed that the polyphenol compounds were mostly in the latter. Keywords: Supercritical CO 2 Extraction, olive pomace, polyphenols ResumoA técnica de Extração Supercrítica (ESC) foi usada para obter extractos de uma amostra, que pretendia simular o bagaço de azeitona, obtida de azeitonas em conserva. O objetivo era conseguir a extração de componentes polifenólicos desta matriz que é considerada um resíduo perigoso proveniente da produção de azeite. O fluido supercrítico usado foi o dióxido de carbono e os estudos de SFE foram realizados em duas fases: a primeira, a uma pressão de 200 bar e 40 ° C e a segunda a 300 bar, 45º C e usando etanol como co-solvente. Em ambos os casos, a SFE foi realizada durante 3 horas. A primeira fase foi realizada para obter uma matriz mais limpa e a segunda etapa tinha como alvo os componentes de interesse. O rendimento total em massa obtido foi de 5,5 %. O estudo preliminar, por HPLC, do perfil químico foi efectuado e o rastreio das amostras obtidas foi realizado, bem como o da água da conserva das azeitonas, e mostraram que os compostos polifenólicos estavam presentes principalmente neste último caso. Essential Oils as Affected by Climatic Conditions AbstractMyrtus Communis L. (Myrtaceae family), commonly known as myrtle, possesses a set of qualities that make it very interesting for the pharmaceutical, nutraceutical and cosmetic industries. In this work, myrtle was studied over a period of three years (2006)(2007)(2008), encompassing the main stages of the development cycle of the plant. The influence of climatic conditions, such as temperature and rainfall, on the chemical composition and yield of the essential oils obtained from leaves and berries was studied. The leaves and berries essential oils were obtained by Clevenger distillation and analysed by GC and GC-MS. The results show that the major components were limonene+1,8-cineole, myrtenyl acetate, α-pinene and linalool. Over the three year period of study, a decrease in the composition of the most volatile compounds (α-pinene and limonene+1,8-cineole) was observed, the reverse being found for linalool and myrtenyl acetate. The highest value for the yield of the leaves' essential oils was observed in the third year (0.64%, w/w), whereas that same year the lowest yield (0.07%, w/w) of fruit was observed. These results were likely due to an atypically high record for rainfall in April and May of that year. The highest value of the berry essential oils (0.14%, w/w) was obtained in the second year.Keywords: Myrtle, Myrtus communis L., Essential oils, composition, climate. Resumo Myrtus communis L.(família das Mirtáceas), vulgarmente conhecida como murta, possui um conjunto de propriedades que a tornam muito interessante para as indústrias farmacêutica, nutracêutica e de cosméticos. Neste trabalho, estudou-se a murta ao longo de um período de três anos (2006)(2007)(2008), de modo a abranger as principais fases do ciclo vegetativo da planta. Estudou-se a influência das condições climáticas, tais como a temperatura e a precipitação, na composição química dos óleos essenciais e no rendimento das folhas e dos frutos.
