PurposeSelecting the optimal supplier is a challenging managerial decision that involves several dimensions that vary over time. Despite the considerable attention devoted to this issue, knowledge is required to be updated and analyzed in this field. This paper reveals new opportunities to advance supplier selection (SS) research from a multidimensional perspective. Moreover, this study aims to formalise SS knowledge to enable the appropriate selection of sustainable, resilient and circular criteria.Design/methodology/approachThis study is developed in two stages: first, a systematic literature review is conducted to select relevant papers. Descriptive and thematic analyses are employed to analyze criteria, solving approaches and case studies. Second, a criterion knowledge-based framework is developed and validated by experts to be implemented as ontology using Protégé software.FindingsEvaluating the viability of suppliers need further studies to integrate other criteria and to align SS objectives with research advancement. Artificial intelligence tools are needed to revolutionize and optimize the traditional techniques used to solve this problem. Literature lucks frameworks for specific sectors. The proposed ontology provides a consistent criteria knowledge base.Practical implicationsFor academics, the results of this study highlight opportunities to improve the viable SS process. From a managerial perspective, the proposed ontology can assist managers in selecting the appropriate criteria. Future works can enrich the proposed ontology and integrate this knowledge base into an information system.Originality/valueThis study contributes to promoting knowledge about viable SS. Capitalizing the knowledge base of criteria in a computer-interpretable manner supports the digitalization of this critical decision.

PurposeThe purpose of this study is to investigate the factors affecting supplier selection in food and beverage divisions in the Greek hotel industry. This research aimed to (1) examine the factors affecting supplier selection in food and beverage divisions of the Greek hotel industry, as these were perceived by the Greek purchasing managers themselves; (2) investigate the underlying factors when changing a supplier.Design/methodology/approachA survey was conducted using a closed-ended type questionnaire. Data collection met the following three criteria: hotels with a fully operational food and beverage division could participate in the research, the research population comprised all the hotels located in 13 regions of Greece, the sample represented over 10% of the total hotels in each region. Finally, 653 valid questionnaires were collected.FindingsExploratory factor analysis showed that six broad sets of factors affect supplier selection in the food and beverage divisions: those related to raw materials, financing, environment, services, origin-nutrients and people. Regarding the factors considered in changing a supplier, three factors were found: service and product quality, economic policy change, food quality and safety management systems.Research limitations/implicationsGreek hotel managers could use the findings of the study to effectively create a supply chain management strategy that will lead to improved firm performance. Understanding the importance of the selection criteria for the supply chain performance and the need to build strong relationships with stakeholders, suppliers could also create a proper supply chain.Originality/valueThe study adds to the knowledge regarding the perspectives of the Greek purchasing managers in food and beverage divisions in hotel industry and the body of much-needed research. Using exploratory factor analysis, a sort of grouping of the variables seems beneficial for simplifying how to present and understand the factors affecting supplier selection in food and beverage divisions within the Greek context.

Two important decisions in supply chains and logistics systems design are the supplier selection and order allocation (SS&OA) problem and the vehicle routing problem (VRP). Supply disruption may reduce the capacity of suppliers, and the transportation network disruption may decrease the number of vehicles in the fleet and disrupt some routes. Also, increasing environmental regulations and environmental awareness makes companies pay more attention to green supply chain management (GSCM). In this paper, we integrate green and resilient supplier selection and order allocation decisions with vehicle routing decisions under disruption. We present a multiproduct two-stage risk-averse mixed-integer stochastic linear programming for the green and resilient supplier selection and order allocation integrated with vehicle routing (G&RSS&OA-V) problem. We consider resilient strategies before disruption, including multiple sourcing, supplier fortification, prepositioned inventory at the protected supplier, and contract with third-party logistics providers (3PLs). The objective function is to minimize the total mean-risk cost and the cost of greenhouse emissions. We use conditional value at risk (CVaR) as a risk measure to control the risk of worst-case cost. The most significant decisions of this model are the strategic decisions of determining the optimal suppliers and the operational decisions of vehicles routing under disruption simultaneously. Other decisions include determining which suppliers should be fortified, the amount to be transported to the hybrid manufacturing-distribution (HMD) center through the supplier or prepositioned emergency inventory, and the amount of lost sales. In order to validate the proposed model and its features, several numerical examples along with sensitivity analysis are performed by GAMS software, which shows the efficiency and application of the developed model, and some managerial insights are reported. The results of the sensitivity analysis show that as α increases from 0.1 to 0.9, the mean-CVaR objective function cost increases to 13.2%. As λ increases from 0.1 to 0.9, the mean-CVaR objective function cost increases to 35.6%. The increase of these two risk factors makes the proposed model more risk-averse. As the expected shortage cost increases by 150%, the mean-CVaR objective function cost increases to 36% while the amount of expected shortage decreases by 56%.
