The Bioaccumulation and Physiological Effects of Heavy Metals in Carrots, Onions, and Potatoes and Dietary Implications for Cr and Ni: A Review

Abstract: The bioaccumulation of heavy metals in food tubers (carrots, onions, and potatoes) as a result of polluted irrigation water has been studied in this review paper. Given that heavy metals can cause a considerable oxidative stress, the impact of these metals to the physiology of the plants has also been assessed. The consumption of vegetables crosscontaminated with heavy metals carries a considerable risk for humans (especially for children and pregnant women) and these dietary implications are discussed while E… Show more

“…The contents of heavy metals in plant products for human nutrition or in fodder plants are important for the quality of the harvest [87][88][89][90][91][92][93][94][95][96][97][98]. It must be distinguished between seed/grain crops such as cereals or soybean and plants of which the whole shoot is harvested such as plants used for silage or grasslands.…”

“…Elevated contents of heavy metals-especially of pollutants such as Cd, Cr or Pb-can also decrease the quality of harvested plant products [92][93][94][95][96][97][98]. Undesirably high or even toxic levels are a rather local, but nevertheless an important problem.…”

“…heavy metal pollution. Potato is a cheap, widely consumed and ubiquitous crop that can be potentially vulnerable to metal accumulation since tubers are in direct contact with soil (Stasinos et al 2014); thus, it is crucial to ensure the quality of soils in this crop.…”

“…Heavy metals are very persistent in the environment, they do not biodegrade or thermodegrade, and they accumulate to toxic levels. The cross-contamination of food by Ni and Cr is an emerging nutritional hazard [8]. Although Ni is an essential metal and plays important roles in plant metabolism, Ni toxicity has become of particular concern due to its increased industrial use [9].…”
