The lead, cadmium and mercury concentrations in muscle, liver and kidney from Finnish pigs and cattle during 1987?1988

Abstract: The lead, cadmium and mercury concentrations in muscle, liver and kidney from Finnish pigs and cattle were determined. The average wet weight lead concentrations in pig muscle, liver and kidney were 15 micrograms/kg, 38 micrograms/kg and 40 micrograms/kg, respectively. The corresponding concentrations for cattle were 13 micrograms/kg, 57 micrograms/kg and 110 micrograms/kg. The average wet weight cadmium concentrations were 1.5 micrograms/kg, 28 micrograms/kg and 170 micrograms/kg (pigs) and 1.3 micrograms/kg,… Show more

“…The mean Pb contents in heifer's and cow's liver were 37 |tg/kg and in pig's liver 11 /tg/kg. The Pb content of the livers in the present study was lower than the levels detected earlier in Finland or Sweden (table 7, Niemi et al 1991, Jorhem et al 1991. The content of Pb in pig's liver was lower than that in cow's liver.…”

“…In Finland, Niemi et al (1991) have found lead contents of 15 /ig/kg in pig muscle and 13 /tg/kg in bovine muscle. Jorhem et al (1991) reported a mean concentration of <5^g/kg in pig and bovine muscle during 1984-1987 in Sweden.…”

“…The remaining meat cuts had a mean cadmium concentration between 0.5 and 0.7 mg/100 g and lower CVs (2% to 34%). In comparison, the analyzed lead concentrations (Niemi et al, 1991;Doganoc, 1996), but were higher then those reported by Tahvonen and Kumpulainen (1994) and Hecht and Kumpulainen (1995) for beef and pork. Lead concentrations in horse meat were found to be lower by a factor of 0.5 compared with those determined by Hecht and Kumpulainen (1995).…”

“…The cadmium contents in muscle in both mountain hares and European hares are low and similar to the cadmium concentrations in Finnish pigs and cattle (Niemi et al 1991) and elks and reindeers (Niemi et al1993 andRintala et al 1995). The cadmium content in muscle was near the limit of detection, 0.001mg/kg wet weight.…”
