Using Expert Elicitation To Link Foodborne Illnesses in the United States to Foods

Abstract: U.S. foodborne illness risk analysis would benefit greatly from better information on the relationship between the incidence of foodborne illness and exposure to foodborne pathogens. In this study, expert elicitation was used to attribute U.S. foodborne illnesses caused by the nine FoodNet pathogens, Toxoplasma gondii, and noroviruses to consumption of foods in 11 broad categories. Forty-two nationally recognized food safety experts responded to a formal written expert elicitation survey. For each pathogen, re… Show more

“…This isolate was indistinguishable by multiple typing methods from one human isolate and closely related to three additional isolates, strongly suggesting that ground beef is a source of human infection with C. jejuni (8,38), especially in the absence of detection of the same type in chicken or any other source. The data presented in the current study support a growing opinion that cattle contribute significantly in some way to the burden of human disease caused by Campylobacter (26,39).…”

“…The majority of the outbreaks were reported in North America and Europe because of better surveillance and reporting systems. In addition, food-borne outbreaks of giardiasis linked to infected food handlers and food handlers who changed diapers of infected children prior to handling food have been reported (115). Food-borne outbreaks of giardiasis have also been associated with ice, vegetables, and chicken salad (302).…”
