Viscosity prediction for fatty systems

Abstract: Viscosity data have been measured as a function of temperature for two pure polyunsaturated fatty compounds (linoleic acid and trilinolein), for two multicomponent fatty systems, for a commercial-grade oleic acid (approximately 80% pure), and for canola oil. The measurements were performed in Cannon Fenske glass capillary kinematic viscometers. The contents of a large data bank, containing viscosity data for saturated, monounsaturated, and polyunsaturated pure fatty substances, were correlated by an equation b… Show more

“…On one hand, the effect of degree of unsaturation on oil viscosity is a well-established phenomenon (Abramovic & Klofutar, 1998;Geller & Goodrum, 2000;Noor Azian, Mustafa Kamal, Panau, & Ten, 2001;Rabelo, Batistta, Cavaleri, & Meirelles, 2000;Valeri & Meirelles, 1997): the higher the unsaturation level, the lower the viscosity of the oil. On the other, the effect of viscosity on bitterness and astringency perception has been thoroughly discussed, in both aqueous and o/w media.…”

“…Predicting the viscosities of biodiesel fuels from the knowledge of their fatty acid composition applying a logarithmic equation was investigated by Allen et al (1999) and Rabelo et al (2000) and verified by further studies (Noor Azian et al, 2001;Boyak et al, 2002).…”

“…As a whole, the wheat germ oil had 7 FFA (Table 1) Table 2. The complete TAG composition for the canola oil can be found by referring to Rabelo et al (13). Its key TAG were OOLi (24.3%, w/w), OOO (24.0%, w/w), and OOLn (17.8%, w/w).…”
