Abstract:Background. Despite interventions to provide knowledge and improve processing of bitter cassava in Democratic Republic of Congo (DRC), cassava processing is sub-optimal. Consumption of insufficiently processed bitter cassava is associated with konzo, a neurological paralytic disease.
