To assess a wine producer’s economic sustainability, it is useful to benchmark its economic indicators against a suitable reference group. Existing research mainly compares wine businesses either by region or by size alone. There is a research gap concerning which of the two benchmarking factors can be more suitable or whether both factors are required. Using a framework of economic sustainability benchmarking figures, the effects of region and size, as well as the effect of their interactions, on 10 economic indicators were estimated through an ANOVA and the estimation of effect sizes. The analysis is based on a unique data set of business data averages of 382 German wine estates across six agricultural years (2014–2019). Region and size both had a significant influence on 7 out of 10 benchmark indicators. Wine estates from distinct regions more strongly differed in their primary indicators of production factors, price and yield as well as secondary indicators of cost and productivity. Contrarily, wine estates of diverse size groups more strongly differed in their tertiary indicators of profitability and return, which are key indicators of economic sustainability. Both size and region should be utilized for suitable economic indicators when benchmarking wine businesses for future assessments of economic sustainability. Hereby, this paper provides a first step in making economic sustainability less subjective for the German wine industry and how to move forward in regards to benchmarking within empirical frameworks and tools of economic sustainability.

The object of this study is the production technology of Tokaj-type wine materials. The material used was white and red grape varieties, withered by twisting on the vine for 4–5 days. Wine materials were prepared from these grape varieties using new technology, i.e., by adding the wort to the alcohol along with the pulp. The technology for the production of environmentally friendly Tokaj-type sweet dessert wines using technical grape varieties cultivated in the foothills of the Goy-Gol and flat zone of the Samukh region has been improved. Providing the population with environmentally friendly food products, as well as wines, is one of the most important tasks of our time. Poor quality food creates conditions for the development of various diseases. For this purpose, a technological scheme for the production of Tokaj-type wine materials has been devised. The quality indicators of Tokaj wine material prepared by fermenting in alcohol must from grapes withered by twisting on the vine for 4–5 days with pulp for 3–4 days were studied. The rates of alcohol loss were calculated based on the contraction coefficient (0.08 %) during co-fermentation with wort. For wine materials prepared from grape varieties grown under the conditions of the Samukh region, alcohol consumption is reduced. This is due to the high sugar content in the wine material. In the prepared wine material, the amount of alcohol and sugar corresponded to the norm – the alcohol content reached 14–15 % and residual sugar 16 %. As a result of the tasting, wine material prepared from the Rkatsiteli grape variety in the Samukh region was rated 9.5 points, and wine material prepared from the red Madras grape variety 9.3 points. The results make it possible to regulate the desired quality of wine material and use it in the production of Tokaj wine

Influence of Growing Region on Targeted Anthocyanin Profile, Color, Phenolics, and Antioxidant Activity of Grape Juice cv. Manjari Medika (MM) were examined. The prevailing environmental conditions affect chemical composition or metabolites of grapes. The MM grape berries were harvested from three environmentally different locations in India i.e. Pune (MMJP), Vijayapura (MMJV), and Nashik (MMJN). MMJV, grown in region with high average temperatures and low rainfall showed higher levels of (393.65 ± 8.18 g/L) reducing sugar with lower levels of color intensity (49.69±0.55%), juice recovery (68.70±0.54%), and acidity (6.98±0.04 g/L) followed by flavonoids (0.023 g/L) than the regions with relatively low temperatures and high rainfall ((MMJP) and (MMJN)). In UHPLC-Oribitrap MS analysis, a total of 11 anthocyanins, which includes delphinidin-3-galactoside (Dp3Ga), cyanidin (Cy), peonidin-glucoside-4-Vinylphenol (Pn3Glu4VP), petunidin-3-glucoside (Pt3Glu), malvidin-3-glucoside (Mv3Glu), pelargonidin (Pg), petunidin-3-acetyl glucoside (Pt3ace), peonidin-3-acetyl glucoside (Pn3ace), malvidin-3-acetyl glucoside (Mv3ace), delphinidin (Dp) and petunidin (Pt) were detected in grape juice samples. MMJV. It is interesting to note that among the 11 anthocyanins detected, two compounds, petunidin-3-acetyl glucoside (Pt3ace) and peonidin-3-acetyl glucoside (Pn3ace), have been reported only in specific grape juice samples, i.e., Pt3ace in MMJV and Pn3ace in MMJN. Discriminatory compounds among the regions were petunidin-3-acetyl glucoside (Pt3ace), peonidin-3-acetyl glucoside (Pn3ace), and cyanidin (Cy) according to principal component analysis (PCA). UHPLC-MS results showed that the total anthocyanin content of the fresh juice in the cultivar tended to increase with altitude from sea level.
