Oleogels are semi-solid materials containing a large fraction of liquid oil entrapped in a network of structuring molecules. In the food industry, these formulations can be used to mimic fats and to deliver bioactive compounds. In the last decade, there has been increasing interest in these structures, not only from a scientific point of view, i.e., studying new molecules, methodologies for gelification, and new structures, but also from a technological point of view, with researchers and companies exploring these structures as a way to overcome certain challenges and/or create new and innovative products. One of the exciting applications of oleogels is the delivery of functional molecules, where the incorporation of oil-soluble functional compounds can be explored not only at the macroscale but also at micro- and nanoscales, resulting in different release behaviors and also different applications. This review presents and discusses the most recent works on the development, production, characterization, and applications of oleogels and other oleogel-based systems to deliver functional molecules in foods.

Xylan-based films have great potential to replace petroleum-based polymers used for packaging and coatings due to their excellent biocompatibility, biodegradability, and good gas barrier properties. However, fabricating a xylan-based film with flexible, transparent, water-proof, and excellent mechanical properties is an enormous challenge. Herein, we manufactured a series of degradable films with adjustable properties via solution-casting using a water-soluble xylan derivative. This is the first report of a pure xylan-based film with high performance, requiring no additives. The tensile strength of the xylan-based film could be controlled by adjusting the aldehyde content, which varied from 105.0 to 132.6 MPa. The smallest initial water contact angle of the xylan-based films is 93.26°, indicating that these films are hydrophobic. This work shows a simple and viable route toward manufacturing xylanbased films with high tensile strength, flexibility, and transparency, which can be used for packaging materials and coatings.

Xylan Hemicellulose: A Renewable Material with Potential Properties for Food Packaging Applications

Xylan hemicelluloses are considered the second most abundant class of polysaccharides after cellulose which has good natural barrier properties necessary for foods packaging papers and films. Xylan exists today as a natural polymer, but its utilisation in packaging applications is limited and not sufficiently analysed. In this study, the performances of hardwood xylan hemicellulose in forming uniform films and as biopolymer for paper coatings were analysed. The xylan-coated paper and film samples were tested regarding their water, air, and water vapour permeability, water solubility, mechanical strength, and antimicrobial activity against pathogenic bacteria. Structural analyses of xylan hemicelluloses emphasised a high number of hydroxyl groups with high water affinity. This affects the functional properties of xylan-coated papers but can facilitate the chemical modification of xylan in order to improve their hydrophobic properties and extend their areas of application. The obtained results unveil a promising starting point for using this material in food packaging applications as a competitive and sustainable alternative to petroleum-based polymers.
