“…AGs are intrinsically reactive species that can undergo intramolecular rearrangement, including reversible acyl migration and anomerization of the isomers. AGs can also modify proteins by acylation (with a loss of the glucuronic acid moiety) and by glycation (with the open-chain isomer form retaining the glucuronic acid moiety) (Figure ).
