Abstract: Jackfruit peel is one among the under-utilized waste materials. In the present study, cellulose was extracted from de-pectinated peel. The peel was treated with alkali followed by a chemical process treatment. The yield of jackfruit cellulose was 27g / 100g of dry matter. Water and oil holding capability was a good retention value and higher hydration capacities of cellulose.
