Abstract:Black rice, rare colored rice, is rich in anthocyanins. Black rice anthocyanin is a kind of natural plant pigment, which has the important effects of anti-oxidation, anti-inflammation and anti-cancer, protecting eyesight and promoting cardiovascular health.
