Abstract:The proanthocyanidins were quantified by butanol/HCl, DMAC (4-(dimethylamino) cinnamaldehyde) and vanillin methods. The characterization was done by HPLC. Enzymatic activity was determined by spectrophotometry methods. The proanthocyanidin (PAs) content showed a reduction with fruit ripeness progress.
