A Case Study for the Extraction, Purification, and Co-Pigmentation of Anthocyanins from Aronia melanocarpa Juice Pomace

Abstract: Chokeberry (Aronia melanocarpa) pomace is a by-product from the juice industry very rich in anthocyanins and other bioactive components. Recovery and purification of anthocyanins from the pomace is a viable valorization strategy that can be implemented to produce high-value natural food colorants with antioxidant properties. In this study, chokeberry pomace was subjected to enzyme-assisted extraction using commercial pectinases. The extracts were further purified by adsorption–desorption using an acrylic resin… Show more

“…Among vegetables, fresh red cabbage has the highest reported anthocyanin content (275.4 mg/100 g) [ 58 ]; its extracts also have the highest anthocyanin content (up to 191.4 mg/100 g) [ 59 ]. Some studies used purified extracts, such as the studies by Bushmelev et al [ 55 ] or Roda-Serrat et al [ 60 ], and therefore the extracts of these fruits are characterised by a higher anthocyanin content compared to fresh or frozen fruit, where the anthocyanin content of non-purified extracts is determined.…”

“…It tolerates well sandy and salty soils. Chokeberries are mostly used for making juice, jam, less often wine [4], and for producing natural food colorants with antioxidant properties [5]. According to the Rural Development Service (LAD -in Latvian) data, in Latvia, the black chokeberry cultivation area increased 2.4 times during the last five years, and in 2022, it was 244 ha.…”

“…Elliot (black chokeberry) is a plant native to East Canada and North America that belongs to the Rosaceae family [1]. The plant is popular, with fruits that are among the richest source of antioxidants and colorants among all berries [2][3][4][5][6][7]. Anthocyanins, procyanidins, flavonoids and phenolics, found in fruits, have severalbeneficial health properties such as antioxidant, anti-inflammatory, anti-cancerogenic, antidiabetic, cardioprotective and hepatoprotective effects [1,[8][9][10][11][12][13].…”
