A Fruit Quality Survey of Peach Cultivars Grown in the Southeastern United States

Abstract: Peach (Prunus persica) production in the southeastern United States extends from mid-May to mid-September. There are ≈60 peach cultivars commercially grown. Each cultivar has unique fruit quality characteristics, which could influence consumer perception and likability. The present study is a survey of chemical and physical characteristics of mature, commercially grown, fresh peaches in Georgia. A collection of 30 cultivars was evaluated in 2015 and 2016 for soluble solids co… Show more

“…Perceived flavor of the fruit is also important for consumer acceptability [46,47]. In peach, the perceived sweetness of the fruit is especially important and is dependent on the sugar content and acidity of the fruit [47,48]. In this study, PCA indicated that 'July Prince' was separable from the other cultivars due, in part, to its lower TA (Figure S2).…”

“…In the present study, the TSS/titratable acidity ratio in the Desertred cultivar was 11.32. Previous studies have linked the sweetness perception of consumers with high TSS/titratable acidity ratio values [9,11,[45][46][47], where the cultivar with the highest ratio was considered the sweetest cultivar [9]. In the present study, the swelling cultivar was considered to be the sweetest cultivar.…”

“…However, these changes affect the sensorial characteristics and nutritional value of peach fruits. Thus, statistical analyses using Pearson's pairwise correlation and regression analysis between the variables can be used to examine variability in the chemical parameters that depict peach quality [11]. However, titratable acidity is the most substantial contributor to overall flavor and acid taste: TSS is the best predictor of sweet taste, and TSS/titratable acidity is the best predictor of fruit flavor [12].…”

“…Negative correlations between the GC a* value and the TA (GC-TA) were consistently found in all four cultivars in both years, indicating that fruit maturity affects acidity (Table 8). It was reported that growing conditions have less impact on TA than SSC, and TA remained relatively consistent season-toseason if fruit maturity was similar (Belisle et al, 2018;Delgado et al, 2013). Because the GC a* value did not have a high correlation with the FC a* value for NMF 'Gulfking', which suggests that GC a* value may not be a reliable maturity index for this NMF cultivar, TA may be used as a maturity index only for the MF cultivars and NMF 'UFSun'.…”
