A review of solar and solar‐assisted drying of fresh produce: state of the art, drying kinetics, and product qualities

Abstract: Global demand exists for high‐quality fresh produce. Nevertheless, the quality of fresh produce is severely impacted by its perishability due to its high moisture content. Therefore, fresh produces are preserved using artificial dryers (hot‐air dryers, catalytic infrared dryers, etc.) driven by electricity or natural fuels. Nonetheless, the exorbitant cost of power has heightened the need for sustainable resources, notably solar energy, for drying. Hence, this article is a review of how solar dryers and solar‐… Show more

“…These studies specifically explored the drying process of different varieties of rough rice, including Wells, Jupiter, Sazandegi, Rocco, Kabirajsal, PR-118, Sungyod, hybrid rice seed, and long-grain rough rice, among others. Additionally, several other studies have examined the drying kinetics of foodstuffs using different drying methods, such as fluidized bed (Oberoi & Sogi, 2015), moving bed, microwave oven (Monteiro et al, 2018), and indirect solar hot air (Boateng, 2023).…”

“…The model can be used to predict the drying process for any convective drying conditions of PS. It could also be used to predict the sludge drying characteristic for large quantities in different industrial convective dryers such a greenhouse solar dryer which is the most popular system to dry similar products [46][47][48].…”

“…Drying agricultural products in many of these countries depends on exposing them to direct sunlight. Although this method is considered to be low cost, it has several disadvantages, the most prominent one being that these products are affected by dust, humidity, wind, and direct sunlight, which ultimately affects their quality and quantity as animals, birds, and insects often feed on them [1,2]. In order to overcome the disadvantages associated with open sun drying, many experimental studies have been implemented to dry agricultural products using several types of solar dryers.…”
